I've been hearing about the world of soaking and sprouting grains for a while. I sprouted wheat a few times and was happy with the results. Soaking freshly ground wheat was a lot easier and a great first step into the world of traditional soaking/sprouting grains. I have the book Nourishing Traditions on hold at the library and look forward to learning more about this whole theory myself.
Whole Wheat Bread w/ Soaked Flour
6 cups lukewarm water
8 cups freshly ground whole wheat flour
7 T raw apple cider vinegar
Mix together with a spoon in your bosch. Let is soak, covered for 7-24 hours.
After the soaking add
2 T SAF instant yeast
2 T Sea Salt
2/3 cup olive oil (or melted butter or melted unrefined coconut oil)
2/3 cup honey
a few extra cups of whole wheat flour
Mix the next 4 ingredients into the soaked mixture. Turn off bosch and add more whole wheat flour a little at a time until the dough pulls away from the sides. Make sure to stop mixer every time you add more flour (may take 4-6 cups). Mix on speed 1 for 8-10 minutes until gluten is developed.
Allow dough to rise in the bowl until doubled, about 1 hour. Then shape into 4 large loaves and place in greased bread pans. Let the bread rise again until doubled. Bake at 350 for 30-35 minutes.
My family loved it.
