Melanie gave us this recipe a while ago and we just tried it out tonight. Amazing! Even my meat loving (picky even though he says he's not) husband loved it! Definitely a recipe to hang on to. I had to post it to the blog!
Greek Quinoa and Avocados
1/2 c. uncooked white quinoa, rinsed and drained
1 c. water
2 roma tomatoes, seeded and finely chopped
1/2 c shredded fresh spinach
1/3 c. finely chopped red onion
2 T lemon juice
2 T olive oil
1/2 t salt
Spinach leaves
2 avocados
1/3 c. crumbled feta cheese
In a sauce pan, combine quinoa and water. Bring to boiling; reduce heat. Simmer, covered about 15 minutes or until liquid is absorbed. Place quinoa in a medium bowl. Add tomato, shredded spinach, and onion; stir to combine. In a small bowl whisk together lemon juice, oil, and salt. Add to quinoa mixture; toss to coat.
Place spinach leaves on four salad plates. Arrange avocado slices on spinach leaves. Spoon quinoa mixture over avocado slices. Sprinkle with some of the feta cheese.
